Simon is Professor of Veterinary Epidemiology and Risk Analysis at University College Dublin, and also Director of the Centre for Veterinary Epidemiology and Risk Analysis (CVERA), a national resource centre which provides policy advice and leads research on issues relating to the control of animal diseases.

The focus of CVERA is broad-ranging, including epidemiological support for the control and eradication of regulatory animal diseases, work in support of Animal Health Ireland, a recently-established national body which is seeking to provide a proactive, coordinated and industry-led approach in Ireland to non-regulatory animal health concerns, and a broad range of other national and international activities, including epidemiological support for emergency animal disease preparedness and response (for example, avian influenza, bluetongue and equine infectious anaemia). Simon is Australian, and had worked in private practice, with governments and with university in Australia prior to moving to Ireland in 2004. He has provided consultancy advice in a number of countries, and is currently chair of the Animal Health and Welfare Panel of the European Food Safety Authority.

Throughout his career, Simon has used epidemiological (disease investigation) methods in a range of situations (on-farm to internationally), but always with the aim to seek practical solutions to (often) complex problems.
